Since Om gifted me the icecream maker on my birthday last year, I have been obsessed with making icecreams! It seems like a natural extension to my love for working with sugar and on Indian desserts.
The problem with Indian icecream brands is while there are some stellar one when it comes to texture and taste, the flavours are kind of predictable! May be that is what the market demands but I am not confined by the will of the market gods. While there are the apple pie ice-cream, the burnt butter and orange, I am enjoying this phase of working on traditional Indian desserts – both their taste and textures.
The latest kid in the block was this coconut and sesame caramel, capturing the very Bengali flavours and textures of Til Narkeler Naru, a ritualistic essential while offering prased to mother goddesses, especially Lakshmi or Lokkhi
This was memories of Kojagari Lokkhi pujo, frozen and served in a bowl.
